Ingredients Mini Paulovas:
– Ken Liquid Egg White (200 g)
– Caster sugar (200 g)
– Icing sugar (100 g)
– Seasonal red fruits

Preparation:
Vigorously beat Ken Liquid Egg White with the casting sugar. When it begins to stiffen, add the icing sugar and again beat vigorously.
Quickly insert in a piping bag with a corrugated nozzle.
On a baking tray, lined with baking paper, squeeze out individual moulds in the form f a “rose”.
Leave the roses in a dry oven for approx. 50 minutes at 140ºC, then remove and leave to cool down.
Fill the centre of each rose with whipped Ken Cream 38%, adding 100 gr. of sugar to each litre of cream
Preparation time: 20 minutes + 1 h. in oven
