– 0102221 Ken Láctea 35% (1600 g)
– Yolk egg (280 g)
– Cava (1 bottle)
– Lemon juice (50 g)
– Leaf gelatine (27 g)
– Sugar (100 g)
– Egg white (250 g)
A smooth texture and a refreshing taste, full of surprises.
An ideal dessert for celebrations, reunions or events… when we need to surprise
Put the gelatine to soak in cold water. Mix together the egg yolk, lemon, cava and sugar. Heat the mixture gently without allowing it to boil. Remove it from the heat. Strain the gelatine into the mixture, beating well as you do so. While the mixture is cooling, whip the Ken Lactea 35% lightly and place in the refrigerator. Beat the egg white with the remaining 100 gr of sugar to a firm snow. Carefully fold in the rest of the ingredients in the following order: first the cava cream with the lightly whipped Ken Láctea 35%. When these ingredients are well mixed, add to the meringue.
Place in the mixture in glasses or dessert dishes and freeze. Remove from the freezer 2 hours before serving, decorate with green grapes and place in the refrigerator.
Time: 35 minutes preparation + 2 hours freezing.
